Cooking: Summer Salad – Wellness Coach App

Our expert coach Tessa will prepare a vibrant and nutrient dense Mediterranean Chickpea Salad with anti-inflammatory lemon vinaigrette dressing.

Ingredients required –
2 15-ounce cans of chickpeas, drained and rinsed
1 large cucumber, diced
1 red bell pepper, diced
2 cups cherry tomatoes, halved
1/4 cup red onion, diced
4 oz crumbled feta cheese; or 1 cubed avocado
1/4 cup finely chopped parsley
1-2 cups finely chopped leafy greens
Seasonings: Salt, pepper, Italian seasoning

Dressing:
1/3 cup olive oil
1/4 cup lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon honey
1-2 garlic cloves, minced
salt and pepper, to taste
